There’s something about crispness of cool Fall air that signals it’s time to turn that oven back on, and start doing some baking! I’ve been wanting to make a new cookie recipe for awhile, as my same chocolate chip cookie recipe is getting a bit mundane. When OXO reached out to partner on their Cookies for Kids Cancer initiative (they’re donating $100 to the cause for this post). It seemed like the perfect opportunity to try whipping up a batch of these Crown Shy Lemon Cookies, and try out the OXO POP baking set. Now onto the cookies! I’ve never made shortbread before and I was impressed with how simple they looked up front. However, I did make pretty big blunder as I only had gluten free flour at home. I figured it would be “fine.” Nope, it wasn’t fine… and most of my cookies were a crumbly mess! Learn from my mistake. After further research I leaned gluten is one of the main things that binds these cookies together… whops. The good news is they still tasted great, as cookies usually do ;).
One other tip: allow yourself plenty of time when making these cookies, as they do require quite a few steps. Once you have your dough you’ll need to freeze it to get your cut outs just right.
The OXO POP baking set made whipping up the cookies a breeze. The lemon cookies were really fun to make. My family assured me they were delicious… as evidenced by all the crumbs left behind!
